Scallion Coffee

A layered iced coffee built the viral way, only the foam on top comes from real brewed coffee reduced to a syrup and whipped into cream instead of instant granules. Cold milk, scallion syrup, and strong coffee stack up under that cloud, finished with fresh scallion confetti and a pinch of flaky salt.

Scallion Coffee
Fair point, fair point — a fella can't go around whipping up freeze-dried crystals when there's a whole pot of good coffee sitting right there on the counter. So I pulled the instant jar clean off the counter and did it the honest way instead: brew it strong, then simmer half of it right down into a thick little coffee syrup, the kind with real body to it. That concentrate whips up into cream just as billowy as any instant foam ever did, only it actually tastes like coffee instead of astronaut rations. Everything else about this one stays put, because the scallion syrup and the three stacked layers were never the problem — the shortcut was. Still sweet, still oniony in a way that somehow works, just built on a proper cup of joe this time around.

Directions

  1. Make the scallion syrup: combine the water, half the granulated sugar, and half the scallions in a small saucepan and simmer, stirring until the sugar dissolves. ⏱ 5 min
  2. Pull it off the heat and let the scallions steep in the syrup another 10 minutes, then strain into a jar and discard the softened scallions. ⏱ 10 min
  3. Pour half the brewed coffee into a small saucepan and simmer until it reduces down into a thick, syrupy coffee concentrate, about 3 tablespoons worth. ⏱ 15 min
  4. Scrape the coffee concentrate into a bowl with the remaining granulated sugar and the heavy cream, then whip with a hand mixer until it turns pale mocha and holds soft, billowy peaks. ⏱ 3 min
  5. Fill four glasses with ice and divide the whole milk between them, then stir a spoonful of the scallion syrup into each glass to taste.
  6. Pour the remaining brewed coffee, chilled, gently over the back of a spoon into each glass so it settles as its own layer over the milk.
  7. Spoon the coffee foam on top to fill each glass, then scatter the remaining scallions and a pinch of flaky salt over the foam. Serve immediately with a long spoon for stirring.
