Anti Chicken

Anti Chicken splits one bird into two mirror-image halves - a honey-gold roast on one side, a squid-ink-black roast on the other - divided by a line of pan sauce that goes up in a tableside flambe. What's left after the flame dies down is just really good roasted chicken, matter and antimatter reconciled on one plate.

Anti Chicken
Physics was never my strong suit, but I know two things that shouldn't sit too close together: dark meat glazed jet black and light meat glazed pure gold, staring each other down on the same plate. This one plays it dead straight - one side of the bird gets a honey-lemon lacquer till it shines like a headlight, the other gets squid ink and charcoal till it goes matte as a chalkboard, and right at the table we pour warm rum down the seam and touch a match to it. That little flare traveling the dividing line is the whole point - matter meets antimatter, everybody at the table gasps, and then you've just got a real good roasted chicken sitting there like nothing happened. My brother-in-law Denny about fell out of his lawn chair the first time I ran this trick at his retirement cookout. Nobody at the table needs to know how simple the actual science is.

Directions

  1. Pat the chicken dry and divide the pieces into two equal batches on separate trays - one for the matter side, one for the antimatter side.
  2. Season both batches all over with the salt, the pepper, half the garlic, and half the thyme.
  3. Whisk together half the butter, the honey, and the zest and juice of the lemon, then brush the glaze over the matter batch until every piece shines.
  4. Whisk the remaining butter with the squid ink and activated charcoal until glossy and jet black, then brush it over the antimatter batch until every piece disappears into matte black.
  5. Roast both trays at 425 degrees F until the matter chicken is deep gold and glassy and the antimatter chicken is fully matte black and cooked through, about 40 minutes, rotating the trays halfway. ⏱ 40 min
  6. Meanwhile, simmer the chicken stock with the remaining garlic and thyme until reduced by half - this becomes the thin line of light that divides the two sides. ⏱ 10 min
  7. Arrange the matter chicken on one half of a platter and the antimatter chicken mirrored on the other half, then draw a thin line of the reduced sauce straight down the seam and dust it with the gold leaf.
  8. At the table, warm the rum in a small saucepan, carefully light it, and pour it down the seam so the flame runs the dividing line and burns itself out before you serve.
