Funny thing about that little packet sauce is it's never touched a stove — it's just vinegar and tomato paste and a fistful of spice getting acquainted in a cold bowl, and that's the whole secret. So I'm building this one the same lazy, honest way: bloom the chili and cumin right into the tomato paste and vinegar so they wake up without any heat, then fold that into a cold cream base instead of the thin stuff in the packets. My sister-in-law Patty used to squeeze those little foil packets straight onto her rolled tacos at every Fourth of July, so I know exactly what flavor this needs to hit. A squeeze of lime and an overnight rest in the fridge is what turns it from "seasoned sour cream" into that sauce. In a small bowl, whisk the tomato paste and white vinegar together until smooth, then whisk in the chili powder, cumin, garlic powder, onion powder, smoked paprika, cayenne pepper, and sugar until it forms a thick, rusty little paste, then let it sit so the spices bloom without any heat ⏱ 5 min
  2. In a bigger bowl, whisk the sour cream and mayonnaise together until smooth, then fold in the spice paste until the whole bowl turns one even orange-red
  3. Whisk in the lime juice and kosher salt, then thin with the ice water a splash at a time until the sauce is thick but pourable, like something you'd want out of a squeeze bottle
  4. Cover tight and refrigerate at least an hour, overnight if you've got the patience, so it goes truly cold and the flavors settle into each other ⏱ 1 hr
