Algolagnic Chicken, Charred and Cooled

There's a word for wanting the burn as much as the relief that follows it, and that's exactly the game I'm playing with this bird. I score the skin in these shallow diagonal cuts so the glaze gets down where it counts, then run the whole spatchcocked chicken hard and fast over screaming coals till the skin blisters and cracks like a good sunburn. The glaze itself is ghost pepper and honey cooked down with butter till it's shiny and a little mean, basted on heavy in the last few minutes so it lacquers instead of just burning off. Then, the second it comes off the grill, I hit it with a cold buttermilk and mint sauce that stops the fire dead in its tracks — that push and pull between the two is the whole point of the dish. My sister-in-law Donna took one bite of an early version of this at her block party and just sat there fanning her mouth and grinning like she wanted more, which told me I'd gotten it right. - 2 piece lime (one juiced, one wedged)

- 4 tbsp unsalted butter (cubed)
- 1 cup buttermilk (cold)
Pantry
- 2 tbsp kosher salt
- 1 tbsp brown sugar
- ½ cup ghost pepper hot sauce
- ⅓ cup honey
- 2 tbsp apple cider vinegar
Spice rack
- 1 tbsp smoked paprika

Directions
- The night before, pat the chicken dry, score the skin in shallow diagonal slashes across each breast and thigh, then rub it all over and under the skin with the kosher salt, brown sugar, and smoked paprika. Set it uncovered on a rack in the fridge overnight. ⏱ 8 hr
- Pull the chicken out about an hour before cooking to take the chill off, and build a screaming hot two-zone fire in the grill, banking the coals to one side. ⏱ 1 hr
- In a small saucepan, combine the ghost pepper hot sauce, honey, butter, apple cider vinegar, and garlic, and simmer over medium heat, stirring, until it turns glossy and coats a spoon. ⏱ 6 min
- Set the chicken skin side up on the cool side of the grill, cover, and cook until it's most of the way through. ⏱ 35 min
- Slide the chicken directly over the coals and cook, basting heavily with the glaze every couple minutes, until the skin blisters, cracks, and chars at the edges. ⏱ 10 min
- Pull the chicken off the grill and let it rest before carving. ⏱ 10 min
- While it rests, whisk together the buttermilk, half the fresh mint, and the juice of one lime, and season with a pinch of flaky salt to make the cooling sauce.
- Carve the chicken and lay it on a board, drizzle the cooling sauce over the top in thin restrained lines, then scatter over the cucumber, the remaining fresh mint, the remaining lime cut into wedges, and a finish of black pepper.
