Now tungsten is the heaviest thing you can hold in one hand without your arm knowin' it — a cube the size of a sugar packet weighs like a brick, and that's the whole joke your nephew was making about desk cubes. So instead of trying to cook a million tons of anything, I went the other way: I took a whole stockpot of beef, mushroom and red wine and boiled it clean down to almost nothing, till what's left is this small, dense, black little cube that's got all that weight packed into one bite. Hid a spoonful of roasted bone marrow butter right in the center too, so when you cut in there's a little surprise flowing out — that's your NASA roadblock, something rich hiding under the hard shell. Dusted it silver so it shines like ore on the plate. It's a whole pot of stock wearing a tuxedo, one bite, all business.

Directions

  1. Roast the beef marrow bones cut side up at 400°F until the marrow is soft and jiggly, about 20 minutes, then scoop the marrow into a bowl and mash it with unsalted butter and a pinch of flaky sea salt; set this marrow butter aside — it's your surprise. ⏱ 20 min
  2. In a saucepan, combine the beef stock, dried porcini mushrooms, dry red wine, shallot, and fresh thyme; bring to a boil, then simmer uncovered until it's reduced by about ninety percent into a thick, syrupy glaze that coats the back of a spoon, roughly 90 minutes. ⏱ 1 hr 30 min
  3. Strain the reduction into a clean pot and discard the solids, then whisk in the soy sauce and activated charcoal powder until it turns a deep, glossy black; season with black pepper.
  4. Whisk the bloomed unflavored powdered gelatin into the warm (not boiling) reduction until fully dissolved and glassy.
  5. Pour a thin layer of the black reduction into six 1-inch silicone cube molds and chill until just set, about 15 minutes. ⏱ 15 min
  6. Spoon a small dollop of the marrow butter onto each set layer, then top off each mold with the remaining reduction to fill completely; chill until rock solid, at least 4 hours. ⏱ 4 hr
  7. Toss the black garlic cloves in the olive oil and dry them in a 275°F oven until firm, about 20 minutes, then shave into thin shards to look like broken ore. ⏱ 20 min
  8. Unmold the cubes and brush each one with the edible silver luster dust until it shines like raw metal.
  9. Set one cube alone in the center of each wide plate, lean an ore shard against it, scatter a pinch more flaky sea salt around it like slag, and serve immediately so the center's still warm.
