Procedural Carrot, Depths Unplumbed
This whole roasted carrot gets a channel bored clean through its center and packed with a brown butter miso glaze, so the deepest part of the vegetable turns out to be the best bite. A gravelly walnut and cumin crumble on top keeps the texture going layer after layer, all the way down to the cut.

I keep an apple corer out in the tackle box by the grill, and it turns out if you run it straight down a roasted carrot instead of an apple, that vegetable's been hiding a hollow nobody ever bothers to check. That's the whole idea here — bore clean through the center after roasting, pack that channel with a brown butter miso glaze, and let the first cut do the surprising part. I'm finishing it with a crushed walnut and cumin gravel so there's texture clear down into the cut, one layer giving way to another the closer you look, kind of like those patterns my grandkid shows me on his computer screen that just keep zooming in. Made something close to this for my sister-in-law Deb's garden club potluck last summer and it disappeared faster than the deviled eggs, which in that crowd is really saying something. Simple vegetable, but treat it right and there's more going on in there than folks expect at first glance.

- 8 piece carrots (large, scrubbed, tops trimmed and reserved)
- 2 clove garlic (minced)
- 1 piece lemon

- 4 tbsp butter
- ½ cup orange juice
Pantry
- 3 tbsp olive oil
- 2 tbsp white miso paste
- 1 tbsp brown sugar
- ½ cup walnuts (chopped)
- ¼ cup panko breadcrumbs
Spice rack
- salt (to taste)
- black pepper (to taste)
- 1 tsp cumin seeds
Directions
- Preheat the oven to 425°F and toss the carrots with the olive oil, a pinch of salt and black pepper, then spread them on a sheet pan and roast until a knife slides in easy, about 25 minutes. ⏱ 25 min
- While those roast, melt the butter in a small saucepan over medium heat, whisk in the miso paste and brown sugar, then pour in the orange juice and garlic and simmer until it's syrupy enough to coat a spoon, about 5 minutes. ⏱ 5 min
- In a dry skillet, toast the walnuts, panko and cumin seeds over medium heat until golden and fragrant, about 3 minutes, then let it cool and crush it together with the reserved carrot tops and the zest of the lemon until it looks like coarse gravel. ⏱ 3 min
- Once the carrots have cooled enough to handle, drive an apple corer or a thin channel knife straight down the center of each one to hollow out the core — that's the depth nobody plumbs at the dinner table, so take your time and don't punch through the tip.
- Spoon the miso glaze into a squeeze bottle and pipe it down into each hollowed carrot until it just starts to well back up out of the top, saving the last few spoonfuls for the plate.
- Pool the remaining glaze on each plate in a ring, drag a toothpick through it in a loose spiral so it looks like it was drawn by an algorithm, set the carrots on top, scatter the walnut gravel over everything, and finish with a squeeze of lemon juice.
