E-Ink Inspired Cheesecake
A checkerboard mosaic cheesecake built from frozen black-cocoa and white-chocolate cubes, pieced together like screen pixels inside a thick graham-cracker bezel. A soft cocoa dust across the top kills the shine, so every slice comes out matte and grayscale, right down to the crumb.

There's a particular grey in an e-reader screen right before it flips a page — that grainy, papery, almost-static grey — and it's been rattling around my head as a flavor for a while now, so this one's a checkerboard mosaic cheesecake built out of little frozen cubes instead of one poured batter. Half the cubes go stark white with white chocolate and vanilla, half go deep charcoal-black with black cocoa, and you piece them together like tile work before the whole thing sets up solid. I dust the top through a sieve so it comes out matte instead of that glossy magazine-cheesecake shine, because a screen never has a shine on it, it's got that soft flat haze. Made a version of this for my brother-in-law Pete's retirement party after forty-one years running the same mail route, and he made everybody guess what the pattern was supposed to be before he'd let anybody near a knife. The graham crust runs thick around the edge like a bezel and thin in the middle, so what you're really building is a little screen you can eat. Slow and cold is the whole trick here — patience is the only ingredient that never makes it onto the list.

- ½ cup cold water (divided)

- 6 tbsp unsalted butter (melted)
- 32 oz cream cheese (softened, divided)
- 1 cup sour cream (divided)
- 1 cup heavy cream (divided)
Pantry
- 2 cup graham crackers (crushed to fine crumbs)
- 1¼ cup granulated sugar (divided)
- 2 tsp vanilla extract (divided)
- 6 oz white chocolate (melted and cooled)
- ⅓ cup black cocoa powder
- 2 tbsp unflavored gelatin (divided)
- 2 tbsp cocoa powder (for dusting)

- ½ tsp fine sea salt (divided)
Directions
- Stir the crushed graham crackers with the melted unsalted butter, 3 tablespoons of the granulated sugar, and a pinch of the fine sea salt, then press it into an 8-by-8-inch lined pan so it runs thick up the sides like a screen bezel and just a thin skim across the bottom.
- Chill the crust while you sprinkle the unflavored gelatin over the cold water in two separate small bowls and let it bloom. ⏱ 10 min
- Beat the cream cheese until smooth and lump-free, then split it evenly between two mixing bowls.
- Into the first bowl, beat in half the sour cream, half the heavy cream, half the remaining granulated sugar, half the vanilla extract, the melted white chocolate, and one bowl of the melted gelatin, until glossy white and fully smooth.
- Into the second bowl, beat in the rest of the sour cream, the rest of the heavy cream, the rest of the granulated sugar, the rest of the vanilla extract, the black cocoa powder, and the second bowl of melted gelatin, until it's a deep, even charcoal-black.
- Pour the white batter into one lined 8-by-8 pan and the black batter into another, smoothing each to about an inch deep, and freeze both until firm enough to cut cleanly. ⏱ 2 hr
- Turn each frozen slab out and cut into roughly 1-inch cubes — you're building pixels, so keep them square and even.
- Fit the black and white cubes into the chilled crust in a checkerboard grid, pressing the seams snug so no gaps show, building whatever grayscale pattern you like across the top.
- Let the mosaic sit at room temperature for 10 minutes so the cube edges soften and fuse together, then refrigerate the whole pan until it sets into one solid cheesecake. ⏱ 4 hr
- Right before serving, dust the top through a fine sieve with the remaining cocoa powder for a soft, matte haze along the edges, like a screen mid-refresh.
- Slice with a hot, dry knife, wiping the blade clean between cuts, so each square shows off a crisp pixel cross-section.
