Taco Bell Cold Sauce
A creamy, smoky-tangy drizzle built from mayo, sour cream, and chipotles in adobo, no cooking required. Whisk it together, let it chill, and it turns any taco, burrito, or bag of tortilla chips into something worth fighting over.

Now this one's fun because the trick isn't heat, it's temperature — everybody chases the fire sauce packets, but the sauce that actually built Taco Bell's whole flavor game is the cold one, that creamy chipotle drizzle that never sees a stove. I'm talking mayo and sour cream as the base, a couple chipotles in adobo doing the smoky heavy lifting, a squeeze of lime to wake it all back up. No simmering, no reduction, just a bowl and a whisk and a little patience in the fridge so the flavors get acquainted. My sister-in-law Deb served tacos at her lake house last summer and this is the sauce that had everybody sneaking spoonfuls straight out of the bowl. It comes together faster than you can preheat anything, which is really the whole point of a cold sauce.
Ingredients
Fresh
- 1 tbsp lime juice
- 1 tbsp fresh cilantro (minced)
Fridge
- ¾ cup mayonnaise
- ½ cup sour cream
- ¼ cup buttermilk
Pantry
- 2 piece chipotle peppers in adobo (minced)
- 1 tbsp adobo sauce (from the chipotle can)
- ½ tsp sugar
Spice rack
- ½ tsp garlic powder
- ½ tsp onion powder
- ¼ tsp ground cumin
- ¼ tsp smoked paprika
- ¼ tsp salt
- black pepper (pinch)
Directions
- In a medium bowl, whisk together the mayonnaise, sour cream, and buttermilk until smooth.
- Stir in the minced chipotle peppers in adobo, the adobo sauce, and the lime juice.
- Season with the garlic powder, onion powder, cumin, smoked paprika, sugar, salt, and a black pepper, then whisk until every fleck of spice disappears into the sauce.
- Fold in the fresh cilantro.
- Cover the bowl and refrigerate for at least an hour so the chipotle and lime settle into the cream instead of just floating on top. ⏱ 1 hr
- Give it a final stir, taste, and add another pinch of salt or squeeze of lime if it needs waking up, then serve it ice cold straight from the fridge.
