Clown Posse Three-Course Big Top Supper
A full sit-down built to satisfy a clown posse on their own terms: a silly-string-topped consommé, a whole balloon animal stuffed and roasted like a holiday ham, and a two-tier funfetti cake guarded by a ring of its own balloon parade. Every prop they demanded gets cooked into the meal in dead earnest, no substitutions, no winking.

Well now, the coals were set for a quiet carrot supper and instead I've got a whole squad of clowns banging on the tailgate, so it's back to the drawing board — and this crowd doesn't want subtle. Three courses, straight down the line: a consommé you spray silly string onto instead of stirring, a whole roasted balloon animal stuffed like a suckling pig and lacquered in a silly-string glaze, and a two-tier funfetti cake standing guard behind its own little parade of balloon buddies. I'm treating the balloons and the string like real pantry items because that's the whole bit — no candy stand-ins, no plastic garnish, just honest cooking technique pointed at things that have never once been food a day in their life. Turns out melted silly string behaves about like caramelizing sugar if you keep the heat low and your nerve steady, which I did not expect going in. Pace yourselves — dessert's got its own fireworks.
Ingredients
Fresh
- 1 piece yellow onion (diced)
- 4 clove garlic (minced)
Fridge
- 8 cup chicken stock
- 4 piece egg whites (for clarifying)
- 3 lb ground beef
- 5 piece eggs (divided)
Pantry
- 2 cup rainbow sprinkles (divided)
- 6 can canned silly string (divided)
- 10 piece party balloons (assorted colors, for twisting, divided)
- 1 cup breadcrumbs
- ½ cup ketchup
- 2 box funfetti cake mix
- ¾ cup vegetable oil
- 1¼ cup water
- 2 cup vanilla frosting
Spice rack
- salt (to taste)
- black pepper (to taste)
Directions
- Whisk the egg whites into the chicken stock in a big stockpot, bring it to the barest simmer, and let the raft build and hold for 20 minutes before ladling gently through cheesecloth into a clear, glowing consommé. ⏱ 20 min
- Pour the consommé into little teacups, spray a tight spiral of canned silly string right across the surface of each one, dust with half the rainbow sprinkles and set that out first — tell folks it's for looking at more than sipping, but let 'em sip anyway.
- Twist six of the party balloons nose to tail into one long dachshund-style balloon animal, leaving the last knot loose as a fill port, then mix the ground beef, breadcrumbs, two of the eggs, the yellow onion, garlic and ketchup into a filling, seasoned with salt and black pepper.
- Load the filling into a pastry bag and pipe it through the fill port until the whole balloon animal is packed tight and holding its shape, then cinch the port knot closed.
- Set the stuffed balloon animal on a roasting rack and roast at 300°F for 90 minutes, until the skin pulls tight and glassy and the filling reads 160°F at the center. ⏱ 1 hr 30 min
- Melt three of the canned silly string in a saucepan over low heat like a sugar syrup, whisking until it collapses into a glossy amber glaze, brush that all over the roast for shine, crust the back with a quarter of the rainbow sprinkles, and carve it tableside straight through balloon and filling like a whole ham — that's the main course.
- Bake the funfetti cake mix into two 9-inch rounds per the box, using the remaining three eggs, the vegetable oil and the water, then cool completely. ⏱ 30 min
- Frost the cooled layers with the vanilla frosting and stack them into a two-tier big top, then twist the remaining four party balloons into a little parade of small balloon animals and stand them around the base like a ring of guards.
- Right before you carry it out, cascade the last quarter of the rainbow sprinkles down the sides like an avalanche and spray two crossed arcs of the last two canned silly string over the top like fireworks — that's dessert, and the whole meal, delivered.
