Scallion Coffee
A layered iced coffee built the viral way — cold milk, scallion-steeped syrup, and strong coffee stacked under a cloud of whipped dalgona foam, finished with a scatter of fresh scallion confetti. Sweet, oniony, and genuinely more balanced than it has any right to be.

Whipping that dalgona foam thick enough to hold its shape is the whole trick here — you want stiff peaks like a meringue, not soft billows, or it'll just sink right into the coffee. I made a version of this for my sister-in-law's book club when she needed a "conversation starter" and let me tell you, it started plenty of conversation. The scallions aren't just sitting up there for show either — I steep half of them right into the syrup so you get that oniony backbone running clean through the whole glass, then save the rest raw for bite and color on top. It sounds like a fluke or a bit but there's real logic to it, scallion has that same sharp green freshness you get from a good espresso crema, just louder. Cold milk on the bottom, syrup-spiked coffee in the middle, foam and confetti scallion up top — you want to see all three bands through the glass before anybody stirs it.
Ingredients
Fresh
- 4 tbsp hot water (for whipping the foam)
- 8 piece scallions (thinly sliced, divided)
- 2 cup brewed coffee (strong, chilled)

- 2 cup whole milk (cold)
Freezer
- 4 cup ice
Pantry
- 4 tbsp instant coffee granules
- ½ cup granulated sugar (divided)
- ½ cup water (for the syrup)
Spice rack
- 1 pinch flaky salt
Directions
- Make the scallion syrup: combine the water, half the granulated sugar, and half the scallions in a small saucepan and simmer, stirring until the sugar dissolves. ⏱ 5 min
- Pull it off the heat and let the scallions steep in the syrup another 10 minutes, then strain into a jar and discard the softened scallions. ⏱ 10 min
- In a bowl, whip the instant coffee granules, the remaining granulated sugar, and the hot water with a hand mixer until it turns pale tan and holds stiff peaks like a meringue. ⏱ 5 min
- Fill four glasses with ice and divide the whole milk between them, then stir a spoonful of the scallion syrup into each glass to taste.
- Pour the brewed coffee gently over the back of a spoon into each glass so it settles as its own layer over the milk.
- Spoon the whipped coffee foam on top to fill each glass, then scatter the remaining scallions and a pinch of flaky salt over the foam. Serve immediately with a long spoon for stirring.
