Community Notedogs with Reader-Added Relish
A snappy all-beef hot dog served plain first, then corrected — a bright, chunky quick relish spooned on right at the table like the last word in an argument. Toasted buttered buns and a mustard flourish keep it an honest cookout dog, context and all.

There's something about a hot dog that just wants a little context added after the fact, and that's the whole idea behind this one. I whipped up a fast, chunky cucumber relish — the kind my sister-in-law Donna used to make between innings at the church softball tournament — and I'm holding it back on purpose, letting each dog go out plain first, dog and bun, no argument, no footnotes. Then right at the table we spoon that bright green relish on top like somebody appending the truth after the fact, and finish it with a squiggle of mustard for good measure. Natural casing dogs get that good snap when you grill 'em good and hot, and a buttered, toasted bun holds up fine under all that extra context without going soggy. It's really just a simple cookout dog with a little bit of a bit built into how you serve it, and I think that's half the fun of the thing.
Ingredients

- 3 piece kirby cucumbers (diced small)
- ½ piece sweet onion (minced)
- 1 piece jalapeño (seeded and minced)
Fridge
- 8 piece all-beef hot dogs, natural casing
- ¼ cup prepared yellow mustard
- 2 tbsp butter (softened)
Pantry
- 8 piece hot dog buns, split-top
- ⅓ cup apple cider vinegar
- 2 tbsp sugar
Spice rack
- 1 tbsp yellow mustard seed
- 1 tsp celery seed
- 1 tsp kosher salt (divided)
- ¼ tsp turmeric (for color)
Directions
- In a small saucepan, combine the cucumbers, onion, jalapeño, mustard seed, celery seed, cider vinegar, sugar, turmeric, and half the salt over medium heat.
- Bring it to a simmer and let it bubble ⏱ 3 min
- for about 3 minutes, just until the cucumbers turn glassy and the kitchen smells like a fair midway, then kill the heat and let the relish cool right in the pan so it stays chunky and bright, not sauce-soft.
- Split the buns open, brush the cut sides with the butter, and toast cut-side down in a hot skillet or on the grill until golden. ⏱ 2 min
- Grill the hot dogs over medium-high heat, turning every couple minutes, until they're blistered and split at the ends. ⏱ 8 min
- Tuck each dog into its toasted bun plain — no toppings yet. That's the post, and it stands on its own for now.
- Right at the table, spoon the cooled relish over each dog like you're appending a note nobody asked for, then finish with a zigzag of the remaining mustard and the last of the salt — reader-added, every time.
